Banana-Topped Vegan Pancakes

The holiday season is in full swing! There is nothing better than spending time with our family and friends over good food. Check out this perfect recipe for your next brunch:


Ingredients:


  • 1 ¼ cups almond or rice milk

  • 1 tablespoon lemon juice

  • 1 tablespoon vegetable oil

  • 1 tablespoon maple syrup, plus extra for serving (grade B has more minerals)

  • ½cup buckwheat flour

  • 1 teaspoon baking soda

  • ½ cup flour or flour mix, choice

  • ½ teaspoon salt

  • 2 bananas, thinly sliced


Directions:


  1. Mix all the wet ingredients together in a small bowl.

  2. Mix all the dry ingredients together in a slightly bigger bowl.

  3. Add the wet to the dry and stir just enough to mix.

  4. Heat a large nonstick skillet over medium-high heat.

  5. Spoon the batter onto the skillet and cook for about a minute and a half or until the bottom side is golden brown and the top has small bubbles.

  6. Repeat until you run out of batter, then serve with banana slices and maple syrup.
