Teriyaki Jackfruit Lettuce Tacos!

If you’ve spent any time in our home state ( sunny California) you know that we take our tacos very seriously. They may as well be their own food group!


And while the taco truck is never too far away, we know that our best option is to know where our food comes from and assembling it ourselves. Never forget, the love we put into our food and nutritions is amplified when we consume it.


Intentional meal making is a great form of self-care!

What you'll Need for the vegan teriyaki sauce:

  • Coconut aminos : It's a bit sweeter than soy sauce.

  • Maple syrup : This is the vegan sweetener.

  • Rice vinegar :For tang.

  • Arrowroot Powder : To thicken.

  • Ginger : For a bit of zing!

  • Garlic: To round things out.

Teriyaki sauce instruction:


What you'll need for the tacos:

  • Jackfruit

  • Red Bell Pepper – for color, texture, and a little sweet!

  • Water Chestnuts – water chestnuts are aquatic vegetables that are native to Asia, tropical Africa, and Oceania. They’re high in fiber, low in calories, and have several vitamins and healthy antioxidants. They’re neutral in flavor but bring all the texture and are perfect in this lettuce wrap mix!

  • Butter Lettuce Leaves – It's delicate and mild, but for that reason, be sure to be careful when assembling!


First, sauté minced garlic (and ginger if using). Because obviously we want a little more garlic!


Once the garlic is fragrant, add shredded jackfruit, diced red bell pepper, and chopped water chestnuts. Cook for a minute and then pour in the teriyaki sauce. Mix evenly together, and allow to simmer for 8-10 minutes.



The simmering allows the flavors to really form well and thicken.



Now the taco filling is complete, it’s time to assemble.



Put out a bowl of rice (if you are adding it), washed lettuce leaves, and the jackfruit filling.


Pour the filling into the lettuce leaf, garnish with cilantro, sesame seeds, lime juice, or whatever you like!
